Falafel balls

I am in search of the recipe for perfect felafel balls

1 1/2 c. chick peas (cover with boiling water & let sit 2 hours)

1 onion, finely chopped

2 tsp finely grated ginger

1 clove garlic

1/3 c. chopped cilantro

1 hot green chili, finely chopped (use gloves, dummy)

1 tsp cumin seeds

1/2 tsp. salt


Drain Chickpeas, but reserve 1 c of liquid.  As you process it all together in the food processor, you will need to add some of the liquid until it is a smooth paste.

Heat oil to 1 inch.  make little patties and cook 2 minutes each side.
