Buckwheat pancakes

  1. 1/2 cup raw buckwheat groats (not kasha), ground into a flour. (or just buckwheat flour)
  2. 1/4 cup brown rice flour.
  3. 1 tbsp cornstarch. (I used potato starch)
  4. 1 tsp baking powder.
  5. 3/4 cup + 2 tbsp almond milk.
  6. 2 tbsp pure maple syrup (or other liquid sweetener)
  7. 1 tsp pure vanilla extract.
  8. 1 medium ripe banana, diced.
